Minestra Soupa – My Great Italian Aunties reciepe
Packed with iron, vitamin A and antioxidant’s this is a wonderful healthy nutritious , immune boosting and cheap soupa!
I make a big batch and eat some every day for lunch – it gets tastier over the next few days as the favours mingle!
Ingredients
1 big glug of olive oil
4 gloves of garlic
1 pinch of dried chilli flakes
2 stalks of celery
Half a handful of flat leaf parsley
1 bunch of spring greens
1 bunch of kale
1 tin of borlotti or canellini beans
1 heap spoon of Boillion (vegetarian stock powder)
Method
Heat the olive oil gently in a big soup pot
Squash and roughly chop the garlic
Throw in the oil with the chilli flakes
Before it goes brown put about a quarter of boiling water in and simmer
Chop the celery and parsley and add to the stock, at this stage it smells delicious!!
Add the bouillion stock and the borlotti beans and cook for about 5 minutes
Chop the greens into mouth size pieces and put in the stock, give a good stir, boil and simmer with lid on half way for about 5 minutes only.
When cooked, put a tea cloth on the top of the pot to absorb the moisture and leave to stand for 10 minutes to absorb all the delicious flavours before serving.
To serve
Add a glug of extra virgin olive oil, pinch of sea salt, squeeze of lemon and more chilli flakes if you like.. eat on its own or with toasted cibatta.
